Black olives are a good source of monounsaturated fats, the same type of fat that makes nuts so healthful. Monounsaturated fats help to lower LDL (the bad cholesterol) as well as protect against heart disease. Monounsaturated fats along with polyunsaturated fats are considered to be "good" fats in terms of overall health. There's also preliminary evidence that monounsaturated fats help with weight control, possibly by increasing satiety.

Along with high protein and fat levels, pine nuts are also filled with amino acids, making them a great source of nutrition. Pignoli (European pine nuts ) and pifiions (American) are an excellent source of vitamins B1 and B3, manganese, copper, magnesium, molybdenum. They are a very good source of zinc. They are a good source of vitamin B2, vitamin E, and potassium. Pifions are a better source of vitamin B1, and pignoli a better source of iron.

Also called by its Italian name, balsamella, this basic French white sauce is made by stirring milk into a butter-flour ROUX. The thickness of the sauce depends on the proportion of flour and butter to milk. The proportions for a thin sauce would be 1 tablespoon each of butter and flour per 1 cup of milk; a medium sauce would use 2 tablespoons each of butter and flour; a thick sauce, 3 tablespoons each. Béchamel, the base of many other sauces, was named after its inventor, Louis XIV's steward Louis de Béchamel.

Hypertension: Sodium and cholesterol are the two elements mainly considered harmful in hypertension and hypertensive people are advised to avoid them. Here, cheese should be viewed critically. The fat content of the cheese depends very much on the quality of the milk viz. full fat or full cream, low fat or fat free. In general, high fat cheeses are more popular as they are tastier. But, keeping in view the public demand, low fat cheeses are also being introduced to the market. So, you need to be choosy while picking them. Then, the sodium! Although, the sodium content of cheeses varies according to the amount of salt added to the milk prior to cheese formation, still it is never that low to be recommended for hypertensive people, as salt is an inevitable part of cheese. So, in general, cheese cannot be recommended for hypertensive people. Although, a low sodium and low fat cheese is helpful in reducing Homocysteine, an agent which is often related with heart diseases, still, it does not make it recommendable for hypertensive people. Another thing in cheese that can help hypertensive people is the vitamin-B content.

The red pigment contained in tomatoes is called lycopene. This compound appears to act as an antioxidant, neutralizing free radicals that can damage cells in the body. Only recently, studies have revealed that lycopene may have twice the punch of another well-known antioxidant betacarotene. Studies conducted by Harvard researchers have discovered that men who consumed 10 servings of tomatoes a week, or the equivalent to 10 slices of pizza, can cut the risk of developing prostate cancer by a formidable 45 percent. However, its benefits are not limited to the prostate. Italian researchers have found that those who consume more that 7 servings of raw tomatoes lower the risk of developing rectal colon or stomach cancers by 60 percent. Israeli researchers have found that lycopene is a powerful inhibitor of lung, breast, and endometrial cancer cells. Research has also indicated that the lycopene in tomatoes can help older people stay active longer.

Basil is also a good source of vitamin A, which helps to prevent damage to the cells by free radicals. Vitamin A also prevents free radicals from oxidizing cholesterol in the blood stream, preventing the cholesterol from building up in the blood vessels.

Magnesium is also present in basil. This essential mineral helps the heart and blood vessels to relax, improving blood flow. Other nutrients found in basil include iron, calcium, potassium, and vitamin C.
