Often seen as a garnish for foods that are served chilled, like deviled eggs and mayonnaise-based salads, it isn't surprising that in the West paprika has a reputation for being tasteless. The secret to unlocking its complex flavor is in heating it. Added toward the end of the cooking cycle, paprika will release a deep, sweet, earthy taste to meats and vegetables. Although exposure to high heat, like that used in sautéing, will destroy the flavor, moderate heat will liberate the flavor of this under-appreciated spice. As a side note to paprika's flavorful qualities, it is often a basic ingredient in Spanish and Portuguese chorizo, a spicy pork sausage

Papayas may be very helpful for the prevention of atherosclerosis and diabetic heart disease. Papayas are an excellent source of vitamin C as well as a good source of vitamin E and vitamin A (through their concentration of pro-vitamin A carotenoid phytonutrients), three very powerful antioxidants.

These nutrients help prevent the oxidation of cholesterol. Only when cholesterol becomes oxidized is it able to stick to and build up in blood vessel walls, forming dangerous plaques that can eventually cause heart attacks or strokes. One way in which dietary vitamin E and vitamin C may exert this effect is through their suggested association with a compound called paraoxonase, an enzyme that inhibits LDL cholesterol and HDL cholesterol oxidation

Mushrooms are valuable health food - low in calories, high in vegetable proteins, chitin, iron, zinc, fiber, essential amino acids, vitamins & minerals. Mushrooms also have a long history of use in Traditional Chinese Medicine . Their legendary effects on promoting good health and vitality and increasing your body's adaptive abilities have been supported by recent studies. These studies suggest that Mushrooms are probiotic - they help our body strengthen itself and fight off illness by maintaining physiological homeostasis - restoring our bodies balance and natural resistance to disease. The compounds they contain have been classified as Host Defense Potentiators (HDP) which can have immune system enhancement properties. That is one of the reasons they are currently used as adjuncts to cancer treatments in Japan and China. "In Japan, Russia, China, and the U.S.A. several different polysaccharide anti tumor agents have been developed from the fruiting body, mycelia, and culture medium of various medicinal mushrooms (Lentinus edodes, Ganoderma lucidum, Schizophyllum commune, Trametes versicolor, Inonotus obliquus, and Flammulina velutipes). Both cellular components and secondary metabolites of a large number of mushrooms have been shown to effect the immune system of the host and therefore could be used to treat a variety of disease states.

The health benefits of wheat depend entirely on the form in which you eat it. These benefits will be few if you select wheat that has been processed into 60% extraction, bleached white flour. 60% extraction-the standard for most wheat products in the United States, including breads, noodles and pastas, baked goods like rolls or biscuits, and cookies-means that 40% of the original wheat grain was removed, and only 60% is left. Unfortunately, the 40% that gets removed includes the bran and the germ of the wheat grain-its most nutrient-rich parts. In the process of making 60% extraction flour, over half of the vitamin B1, B2, B3, E, folic acid, calcium, phosphorus, zinc, copper, iron, and fiber are lost.

The incidence of breast cancer in first-generation Japanese migrants to Hawaii is about 60 percent of the rate in subsequent generations of Japanese born in Hawaii. Researchers thought this might have something to do with the fact that, in Japan, consumption of soy foods is about five times or more what it is among Japanese migrants to Hawaii. Researchers at the Departments of Nutrition Sciences and Biostatistics/Biomathematics, University of Alabama at Birmingham, theorized that miso, natto, soy sauce, and other traditionally fermented soybean foods might contribute to their lower incidence of disease. To test this hypothesis, the scientists initiated feeding trials with laboratory animals and found that feeding them miso delayed the appearance of induced breast cancer compared with animals on the control diet. The miso-supplemented animals showed a trend toward a lower number of cancers per animal, a trend toward a higher number of benign tumors per animal, and a trend toward a lower growth rate of cancers compared with controls. The researchers concluded, "This data suggest that miso consumption may be a factor producing a lower breast cancer incidence in Japanese women. Organic compounds found in fermented soybean-based foods may exert a chemoprotective effect."
