Easy Leftover Black Eye Pea Wraps

Description

Not only are black-eye peas low in fat and high in quality protein, but they also have the added bonus of soluble fiber's disease-preventing qualities. The soluble fiber in beans dissolves in water, trapping bile acids in its gummy goo. This lowers blood levels of damaging LDL cholesterol, especially if LDL cholesterol levels were high to begin with, without compromising the level of protective HDL cholesterol

½ c. Seasoned rice Vinegar- roasted garlic or red pepper
1 tbsp olive oil
¼ tsp salt
1-2 jalapeno peppers seeded and minced
2 cloves garlic diced
1 can black eye peas, rinsed and drained
¾ c. chicken diced
1 lg. tomato, seeded and diced
1 yellow bell pepper, diced
1/3 c. chopped cilantro or parsley
¼ c. sliced green onions
4-6 spinach tortilla wraps

Methods/steps

In a large bowl, combine seasoned rice vinegar, oil, salt, jalapeno and garlic; mix well. Stir in remaining ingredients. Serve immediately or cover and refrigerate until ready to wrap.
