Napoleon Salad
Ingredients
1/4 cup white wine vinegar
1 T. each minced fresh parsley leaves and chives
1 T. honey
1 T. Dijon mustard
Kosher salad and black pepper to taste
2 T. extra virgin olive oil
2 T. vegetable oil
1 head butter lettuce, separated into leaves
1/2 cup seeded diced tomato
1/2 cup goat or feta cheese
Methods/steps
Whisk together vinegar, parsley, chives, honey, mustard, salt and pepper for the vinaigrette in a bowl. Drizzle in olive oil and vegetable oil and whisk constantly until vinaigrette is well blended. Toss lettuce leave with some of the vinaigrette. Arrange a few leaves on a plate; sprinkle with tomato and cheese, then to with more leaves. Continue layering until half the ingredients are used. Prepare a second salad with the remaining ingredients. Serve each salad with a knife and fork.
