All lettuce is a good source of chlorophyll and vitamin K. Iceberg lettuce provides a
good source of choline. Romain lettuce is the most nutrient-dense of all the lettuce
varieties and is an excellent source of vitamins A, B1, B2, and C, folic acid,
manganese and chromium.

Ingredients
2 tbsp fat free chicken broth
1 1/2 tbsp lime juice
1 tbsp each reduced sodium soy sauce and fish sauce
1/2 tsp each sugar and chili garlic sauce
1 tsp cornstarch
1 green onion
1 clove garlic, peeled and minced
1 tbsp each minced gingerroot and canola oil
1 cup diced red bell peppers
3/4 cup julienned carrots
1/2 cup diced water chestnuts
3/4 pound boneless skinless chicken breast, diced
1 small head lettuce, leaves separated
Methods/steps
In small bowl, combine broth, juice, soy sauce, fish sauce, sugar, chili garlic sauce and cornstarch until blended.
Cut green part of green onion into 1" pieces, finely chop white part. In bowl, combine chopped green onion, garlic and gingerroot.
In skillet, cook oil 30 seconds or until heated. Add next 3 ingredients. Cook 2 min. Add garlic mixture. Cook 1 min. Stir in chicken. Cook 3 min. or until cooked through. Add broth lime mixture and 1 min. Stir in chicken. Cook 3 min. or until cooked through. Add broth lime mixture and 1" green onion pieces. Cook 1 min. or until sauce thickens
