Sweet and Sour Chicken Slaw
Description
Napa cabbage is low in calories and high in chew-appeal. You can eat a lot and chew a lot and the calories will stay low, while your tummy feels full. Also, the Vitamin amounts of A and C in Napa Cabbage are surprisingly very good!
Ingredients
6 tsp olive oil
1 yellow onion, finely chopped
1 tsp mustard seed
1 lg. carrot, peeled and julienne
½ head Napa cabbage, cored and thinly sliced cut crosswise
3 tbsp apple cider vinegar
1 tbsp dark honey
½ tsp salt
¼ tsp freshly ground pepper
½ tsp caraway seed
1 tbsp fresh flat leaf parsley
1 ½ c. cooked shredded chicken
Methods/steps
Ina large nonstick sauté pan heat 2 teaspoons of the olive oil over medium-high heat until hot but not smoking. Add the onion, and mustard seed and sauté until the onion is soft and lightly golden, about 6 minutes. Transfer to a large bowl. Reduce the heat to medium and add the carrot and toss and stir constantly until the carrot is crisp, about 3 minutes. Transfer to the bowl with onions. Add remaining 2 teaspoons of oil to the pan over medium heat. Add the cabbage and chicken toss until the cabbage just begins to wilt, about 3 minutes. Quickly transfer to the bowl with the other vegetables. Quickly add the vinegar and honey to the pan over medium heat, stirring until combined and bubbly and the honey is dissolved. Pour over the slaw. Add the salt and pepper and toss well. Garnish with the caraway seed and parsley and serve warm.
