Ingredients
1 can(s) (1-oz.) mandarin oranges , drained
.5 cup(s) (shredded ) coconut, toasted
.5 cup(s) (roasted) cashews
1 bunch(es) scallions, chopped
1 whole(s) juice of 1 lime
.25 teaspoon(s) salt
.25 teaspoon(s) pepper
.333 cup(s) mayonnaise
1 handful lettuce leaves, for garnish, optional
Methods/steps
Combine first 8 ingredients in a large bowl. Add mayonnaise, tossing to coat evenly.
Place lettuce on flour tortillas, if you like. Add chicken mixture and roll up.
